Warped Pico de Gallo
1/2 onion, chopped (I use Vidalia)
1 can black beans, drained and rinsed
1 cup frozen or canned corn
1 can diced tomatoes with jalapeno; drain most of the liquid
1/2 cup dried cranberries
1 tsp cilantro
1/2 tsp salt (or to taste)
2 pinches black pepper
Combine all ingredients. Refrigerate to let flavors meld.
Servie with chips, or veggies.
